Richmond, VA. A business known as Shucks Maine Lobster showed how it packages complete Maine lobsters, all meat without the shells. About 200 pounds of live Maine lobsters are put in a big cylindrical cage and dropped into a machine that creates intense water pressure, loosening the meat from the shells. That makes it easy for workers to scoop out the meat, which is then packaged and distributed. The plan is to market Maine lobster all over Europe. Shucks President John Hathaway says he’s now looking at expanding sales to Asia. Baldacci says the budding Maine business advances the state’s goal to process more homegrown goods, whether it’s blueberries, lumber or seafood.
